Risotto with Calabrese sausage

Another Wifey creation exclusive, yo. She gots the rizzo on lock down. The sausages were store bought from WF. No nitrates homie. She got me the spicy ones and they remind me of my childhood. My parents ran a sandwich shop and we used to get our sausages from a factory called Home Sausages in SF. I remember going every week with my mom in the summertime to the place to pick up our orders for Polish sausages and Louisiana hot links. Man, I've never tasted a spicier hot link than the Home one. It was meaty and tasty and spicy (did I mention that already?). Towards the end of my parents' tenure at the shop, I could recall that this may be the last time I have a Home hot link. It's prolly been about 2 years or more since I last had a Louisiana hot link. While the WF ones are not the same, it has the essence of it: a balance of savory flavas with a kick to it. The best thing is that the WF ones are better made. You can taste the "cleanliness" of it all...if that makes sense. I think I've found a new food love. Funny how the food we grew up can significantly define our childhood. I suppose this is true if the food was either good or bad.
